1.5 lb (675 g) (choose any) citrus fruit, washed, quartered and pips removed and reserved
15 fl oz (450 ml) water
3 lbs (1.3 kg) sugar
1. Place the prepared fruit in a food processor and whizz until chopped to the consistency you prefer – chunky or smooth.
2. Place in a large bowl suitable for the microwave, with the water. Put the pips in a muslin bag and add to the bowl. Cook on full power for 15 minutes.
3. Stir in the sugar and microwave on medium power for 60 minutes or until setting point is reached, stirring thoroughly every 10 minutes. Remove any scum.
4. Allow to stand for 10 minutes and then remove the bag of pips. Pour into cooled, sterilized jars and seal. Label and store.
