4 oz (100g) margarine

2 tablespoons of golden syrup

12 oz (350g) self-rising Flour

8 oz (225g) of Demerara sugar

2 teaspoons of ginger (optional)

1 teaspoon of bicarbonate of soda

3 oz (75g) of porridge oats

1 egg, beaten

1/2 teaspoon of salt

2 tubes of smarties




  1.     Melt syrup and margarine together.

2.    Add the beaten egg and dry ingredients and mix into a smooth dough.

3.    Make into 2 inch balls, flatten slightly and place well apart on a well greased baking tray.

4.    Press 6 smarties onto each cookie and bake at 350 degrees for 10-15 minutes or until golden brown.
