Traditional Strawberry Jam

A delicious recipe that fills your house with an amazing smell! I love this recipe and have used it for many many years.

Ingredients

  • 3 lb 1.3 kg strawberries, hulled, wiped and washed, if needed
  • juice of 1 large lemon about 2 tablespoons
  • 3 lb 1.3 kg granulated sugar

Instructions

  • Put the fruit in a large pan with the lemon juice and simmer gently until the juices begin to run – about 10 minutes.
  • Mash the strawberries down with a potato masher and continue to simmer for another 5 minutes, until the fruit is reduced to a thick purée.
  • Remove from the heat and test for pectin (See Notes 1). If necessary, add more pectin or accept a runnier jam.
  • Add the sugar and stir until completely dissolved. Bring to the boil and boil for about 5 minutes before removing any scum (See Notes 2). Test for set (See Notes 3). If necessary, boil for longer and test again.
  • Pour into cooled, sterilized jars and seal. Label and store.

Notes

Note 1: How to check for Pectin
Take a teaspoon of juice from pan and pour into a small glass container and allow to cool.
Add a tablespoon of methylated spirit (or use 70-90% rubbing alcohol) and shake well.
After a minute, a transparent clot should form.
If the clot is large and jelly-like, the pectin content is high – no more needed. If the clot is two or three lumps, the pectin is adequate for a set.
If there is no clot or lots of very small ones, the pectin content is low. Extra pectin is needed for a full set.
Note 2: Scum on the top of the preserve is normal. The amount will vary to recipes. Wait until the jam is cooked – as it cools, you can add a knob of butter. If there is a lot of scum, remove with a spoon, then add a knob of butter. Scum is not harmful – just air – but looks unattractive.
Note 3: I like to use the cold sauce test – chill in the fridge, then put a teaspoon of jam on the plate – if it wrinkles after 1 minute, set is achieved.
