Ingredients

  • 1 lb 500 g tomatoes
  • 8 oz 250 g cooking apples
  • 4 oz 100 g caster sugar
  • 4 oz 100 g onions
  • 1 tsp 5 ml salt
  • 6 cloves
  • 2 pieces root ginger
  • 12 peppercorns
  • 2 chillies
  • 1/4 pint 150 ml malt vinegar

Instructions

  • Chop tomatoes and apples roughly, including the skin and cores. Peel and chop onions. Place ingredients together in a pan, cover and simmer until soft.
  • When softened add the vinegar, sugar and spices and simmer, covered for a further 30 minutes. Sieve and return to pan.
  • Simmer without lid for 15 minutes to thicken. Pour into hot, sterilized jars and place in a simmering water bath for 30 minutes. Seal and label.
